Vegan lemon loaf cake

We decided to make our first bake since giving Veganism a go, during lockdown one we become somewhat good at our amateur baking, by amateur I mean it looked like two 3 year olds had been left unattended in the kitchen.

I love anything lemon and decided a lemon cake was the way forward for our first vegan bake. It was really simple to make. We had a bit of a disaster when the cake fell apart because I took it out of the tin when it was too hot! Despite that it tasted really good in the end, swings and round abouts.

All you need to make the cake is the following:

100ml vegetable oil

275g of self raising flour

200g caster sugar

1 tsp bicarbonate soda

Some lemon juice

175ml of water

All you do is mix the flour, bicarb soda and sugar in a bowl then add 170ml of water along with your oil. Once the mixture is ready place it into a pre greased cake tin and bake in the oven for 30 minutes, we placed it on gas 6.

Once the cake is cooked make sure you leave it in the tin to cool for around 15 minutes and don’t do what I did and try and take it out too early because it will fall apart!!

Then once the cake is out of the tin leave it to cool for 30 mins. Once cooled you can make up your icing by using icing sugar and lemon juice. Adjust the quantities yourself to your own preference on the thickness of the icing. And voila there you have it. An easy vegan bake. It also works out super cheap so is great value and great tasting!
