SWEET N SOUR VEGGIES 🌱

Sweet n sour

This dish was delishhhh!! I didn’t realise how simple it was to make a vegan sweet n sour sauce, it was rich, but I’m a lover of rich foods and think this is a simple dish that all of you should try!

So let’s get started,

What you need:

3 x peppers (I used red,green & yellow sliced)

1 x brown onion (thickly diced)

3 x tsp of brown sugar

4 x tbsp of plain flour

4 big squirts of ketchup

1 x tin of chopped pineapple

Salt & pepper

Lemon juice

Olive oil

So to start with you want to place your flour, a pinch of salt and pepper into a large mixing bowl, give it a quick mix so that the seasoning is evenly spread throughout.

Place your cut peppers & onions into the bowl and mix it all in so that all the veggies are coated in the flour.

Then you want to place some a large dash of olive oil into a wok, then pour in your coated veggies. Once they simmered for around 5 minutes you want to add some more ingredients.

Sprinkle over your sugar, and squirt your ketchup in, give this a mix and then add a few dashes of lemon juice.

Let this simmer for a further minute or so and then place half of the pineapple pieces in or as much as you like. Then you want to use the juice from the tinned pineapple and pour that into your mixture. This should create a gloopy sweet n sour sauce.

Let all this simmer for a few more minutes and then it’s done! Your perfect takeaway style sweet n sour! I served mine with some broccoli, rice and vegan nuggets.
