Cheesy as heck Mac no cheese

Mac NO CHEESE

Before going plant based I was the biggest ever cheese fan and couldn’t imagine when I was a vegetarian that I would successfully manage to live a vegan lifestyle as it was a huge portion of my diet.

Since being plant based I’ve been trying hard to master the cheesiest plant based Mac and cheese I could, I think I’ve finally done it!!

I used the applewood smoked cheese for this dish as I personally think it’s the best vegan alternative for melting, but we all have different tastes and opinions so you can use your own personal favourite.

What you need:

1/2 a block of applewood smoked cheese

2tbsp of flour

1tbsp of plant based butter

250ML of plant based milk (I used almond)

250g of dried Macaroni

Pinch of salt & black pepper

Start by cooking your macaroni as per the packet instructions. When the macaroni is cooking place your butter into a saucepan on a medium heat, once the butter is melted add your flour and whisk until it forms a thick paste, then you want to slowly add your milk whilst whisking, if the consistency is too thick for you, add more milk.

Once you have your desired consistency you then want to add two handfuls of your cheese. Once the cheese is melted your sauce is ready.

Drain your macaroni and place in an oven proof dish, mix in your sauce and sprinkle generous amounts of the remaining cheese on top.

Place in the oven on gas 6 for around 15 minutes until the cheese is golden and bubbly…

Then stuff your face with this amazon plant based Mac and cheese, you will Brie in heaven!! Hehehe!
