spicy sausage & potato
If you’re an Arrabbiata lover like me, you’re going to love this dish!
I’ve taken away the classic Arrabbiata carb of Pasta and replaced them with my second favourite carb, POTATOES!! This is probably the simplest yet most hearty dish I have made yet! You just need some basic cupboard staples, and you are on your way! If you want to use a meat sausage rather than the veggie variety that’s completely up to you! This dish is great on a cold day!
All you need to serve 2:
2 x handfuls of baby potatoes
½ a Tin of chopped Tomatoes
200g of Passata
3 x Veggie sausages of your choice (chopped)
Handful of spinach
2 x Garlic cloves (sliced)
Handful of chilli flakes
Firstly, you want to get your baby pots on the boil.
When your potatoes are boiling you want to fry your sliced Garlic in a glug of olive oil until browned. When browned place in some chilli flakes and stir. Then you want to stick half a tin of chopped tomatoes in. give it a quick stir and then add the passata which will help thicken the sauce.
You then want to add your veggie sausages and spinach and simmer until the spinach has wilted.
Once the potatoes are cooked place them in a baking dish. Once all are placed in the baking dish squash the tops of them down with a fork in order for them to soak up the sauce.
Pour your sauce mixture into the oven dish covering the potatoes. Once the potatoes are covered in the sausage and sauce mixture season with salt and pepper to your taste and sprinkle over the top a generous amount of chilli flakes. Place the dish in the oven and bake on a medium heat for about 15 minutes. Once baked leave to cool and serve. We served ours with rice, in total including the rice each portion of ours came to the price of 77p!
