Vegan Roast Alternative!
This recipe is a simple easy to make vegan alternative which is a perfect addition to a Roast Dinner. This dish can also be made ‘nut free’ by replacing the nuts with seeds or just leaving them out altogether! I was surprised with how good this Roast alternative tasted and also by the fact how much easier and cheaper it is to make your own instead of buying it from a shop!
All you need:
2 x Carrots
2 x Parsnips
2 x Garlic Cloves (thinly chopped)
1 x Red or White Onion (chopped)
1 x Handful of mixed seeds or nuts
1 x handful of Cashew nuts
The method is so simple, all you need to do is chop your carrot & Parsnips and place them on a boil until they are thoroughly cooked. Once cooked place them into a mixing bowl.
Then place a dash of olive oil into a frying pan and fry your Garlic & onion. Add salt and pepper to your liking and fry until browned.
Once browned place the onion & Garlic mixture into the mixing bowl, if using seeds and nuts add them to the mixture at this point. Mash the mixture with a fork (or a masher if you can’t be bothered using a fork) once mashed place into a baking dish and sprinkle with cashews and place in the oven for 30 mins on Gas mark 7.
And there you have it – a simple vegan alternative to add to any Roast dinner.
